Size — the one that actually matters
A 58mm roll will not feed into an 80mm printer, and an 80mm roll will not fit a 58mm holder — there's no "close enough" with paper width. If you're not sure which you have, check your printer's model/spec sheet, or measure a roll you've used before.
Length matters less for fit (most holders accept a range), but longer rolls mean fewer paper changes — worth paying slightly more per roll if you're billing high volume.
GSM — is it real, or marketing?
48–55 GSM — thin, cheapest
Fine for short-life receipts. More prone to "paper dust" — faded or streaky prints as the printer ages.
55–70 GSM — the common middle ground
What most restaurants actually use day to day. Good balance of cost and print reliability.
70+ GSM — thicker, longer legibility
Noticeably sturdier paper, holds print quality longer — worth it if customers keep bills for expense claims or warranty.
BPA-free — worth choosing deliberately
Thermal paper prints via a heat-sensitive coating, and some brands use BPA in that coating. BPA-free versions print identically — just a different formulation. Since receipts go straight into a customer's hand, it's a reasonable thing to pick on purpose rather than not think about.
Why receipts fade — and how to slow it
Thermal paper is heat-sensitive by design, so heat, direct sunlight, and humidity all fade it over time — normal, not a defect. Keep spare rolls (and any receipts you need to retain) away from direct sun and heat, and expect any thermal receipt to fade eventually regardless of brand.
